Become a NUTRIENT SEEKER instead of a calorie avoider!
Instapot users get out your dried beans and get hungry because High protein, 10 ingredient black bean soup is about to be a staple in your busy week!
(Okay, I’m self projecting here! But it is in ours!)
- 3 cups dry black beans, rinsed
- 1 large yellow onion, diced
- 1 carrot, chopped
- 3 stalks of celery, minced
- 6 garlic cloves, minced
- 1 1/2 cups of water
- 3 cups of veggie broth
- 1 tbsp of cumin
- 1 tsp of chili powder
- 1 tsp of cayenne pepper
- 1 tsp of pink salt
- juice of 1 lime
- 1/4 cup of cilantro
Add all of the ingredients (except the lime juice and cilantro) in to the Instant Pot® and stir.
Set the seal.
Set the cooker for 30 minutes.
Once finished, let the steam release naturally.
Add in the lime juice and cilantro.
Lightly blend the soup using an immersion blender. If you don’t have an immersion blender, take about 1/2 or 3/4 of the soup and blend in a blender. Mix the soup back together.
**Optionally you can add some avocado, baked tortilla chips or salsa to accompany this amazing one dish meal!
** Serve over rice or a baked potato
** Feel free to increase spices as you like as well as make a double batch
